7 Easy Weeknight Meals

Okay so we’ve all heard that getting back into shape is 80% diet and 20% working out right? Well, Paul and I are trying are trying to cook more because it saves money and we’re trying to eat healthier while getting into shape.
Now we LOVE eating out. We’ve probably just been doing it a little too much that we’re taking this moment to re-balance ourselves by making more of our own meals at home. It’s really hard not to eat out all the time when you live in a food city like Portland.
We’ve started this Sunday prep routine and even made 7 dump dinners to go into our freezer. I like to cook a big healthy meal on Sunday night that can work for lunches all week. At the same time, Paul will prep one of these crock pot meals that can go into the fridge that we can cook on Monday.
During the week I like to keep my meals simple and save the complicated recipes for the weekend or when I have more time. Here 7 easy weeknight meals to keep you going!
1) Ahi Tuna Nicoise Salad
This one is a super easy recipe – just arranage your salad on a plate, sear off some ahi tuna or open a can of tuna! You can make your own dressing or just use store-bought if you’re short on time. It’s a great little recipe for one!
I like to use up whatever vegetables I have in the fridge. You can also boil and peel your eggs the night before and prep your potatoes and green beans ahead of time as well. See my recipe for Ahi Tuna Nicoise Salad.
2) Grilled Peaches + Burrata
If you don’t want to use the BBQ, just use a non-stick indoor grill pan if you have one. This is another dinner you simply ‘arrange’. The only cooking involved is grilling the peaches. 3) Quinoa Fried Rice
I love this recipe because it requires minimal ingredients and it’s packed full of flavour. The secret to getting this one right is having a very hot pan and all your ingredients chopped and ready to go ahead of time as everything cooks quickly. See the recipe for Quinoa Fried Rice.
4) Cauliflower + Chickpea Curry
For a quick weeknight Indian dish, this curry cooks up in one pot and the only thing that takes a bit of time is steaming your rice. Do that as soon as you get home while you prepare your Cauliflower + Chickpea Curry. To save time, buy pre-cut cauliflower and just dump and cook!
5) Quick + Simple Quiche
I love making quiche for dinner because it can double up as a breakfast or lunch the next day! I use pre-made frozen pie crusts to speed this recipe along. All you need are eggs, cream and whatever vegetables you have on hand to make this quiche recipe happen.
6) Roasted Vegetable + Quinoa Bowl
This recipe is involves roasting vegetables and cooking quinoa – easy! I like roasted carrots and onion with a bit of spinach. Cook a big batch of quinoa on Sunday night so you don’t have to worry about making it when you get home. See the recipe for Roasted Carrot + Spinach Quinoa Bowl.
7) Quick Chicken + Baby Broccoli with Spicy Peanut Sauce
Make your sheet pan and oven do all the work for you. This recipe for chicken + broccoli with peanut sauce cooks up in just 10 minutes and uses ingredients you probably already have in your pantry.
