Do you meal prep?

After a little Pinterest inspo, I set myself up to finally meal prep a few grab and go lunches on the weekend. I stuck to a pretty simple recipe. Here’s what made it:

Roasted Sweet Potatoes – I cut up a sweet potato into cubes and roasted them in the oven with a bit of olive oil, salt and pepper and a bit of dried thyme.

Hard Boiled Eggs – While they sweet potatoes were baking, I made a couple hard boiled eggs. In the end, I ended up making more because just one egg wasn’t filling enough for me. I like to cut mine in half, sprinkle with sea salt, pepper and smoked paprika.

Steamed Broccoli – Lastly, I steamed up a bag of pre-cut organic broccoli and added them to my meal prep bowl.

Overall, I ended up eating these bowl all week at lunch. They were filling enough and packed full of carbs and protein that I didn’t fall asleep after eating. I was energized and ready to work. However, I did require a 4 pm snack like an apple. Packed full of fibre and a bit of natural sugar to keep me going.

For the containers, I just picked up these clear rectangles from Target. They are dishwasher safe and BPA-free. Not bad for my first meal prep session! For future bowls I’m thinking of doing cut up roast chicken that I season with spices beforehand. Perhaps turkey meatballs with tomato sauce with spaghetti squash and steamed broccoli. I’m also thinking of making a bunch of healthy breakfast burritos and freezing those as well.
